Colombian aji picante

In South American cuisine, aji is the name for both a variety of chilli peppers and fresh salsa made with these peppers.
This Colombian recipe is known as salsa de aji picante, and it features two jalapeno peppers, making it pretty spicy. 
Eight months before my son was born, I was working on a project in Colombia. One evening, my local host took me and the team to a Parrillada in the hills overlooking Bogata. The meat was awesome, but the salsas that accompanied the meat were mind-blowing. This is one of those salas.

Equipment

  • 1 small food processor

Ingredients
  

  • 4 tbsp spring onions
  • 1 medium medium tomato
  • 2 jalapeno pepper chopped
  • cup coriander minced
  • cup parsley
  • 1 lime (juice)
  • 1 tsp white vinegar
  • 1 tsp sugar
  • 1 tbsp olive oil
  • 1/4 cup water or more as needed

Seasoning

  • ½ tsp rock salt
  • ½ tsp fresh black pepper to taste

Instructions
 

  • Place all ingredients in a small food processor and pulse a few times
  • Refrigerate for 1-2 hours to let the flavours meld.

Notes

Serve with barbecued steak or any other cut of meat
