Apricot stuffing

Adding soft apricots to sausage meat creates a turkey stuffing that offers a delightful sweetness and a unique flavour. This recipe makes enough stuffing for a 6 kg turkey.

Equipment

  • 1 Food processor
  • 1 large mixing bowl

Ingredients
  

  • 1 kg minced pork
  • 250 g soft apricots
  • 3 clove garlic
  • 2 cm root ginger
  • 1 whole red chilli
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried sage
  • 1 tsp fresh thyme
  • 1 tsp fresh rosemary
  • 1 tsp dried marjoram
  • ½ tsp dried fennel seeds

Instructions
 

  • Place the apricots, ginger, garlic, red chilli, fresh rosemary and thyme in a food processor and turn into thick textured paste
  • In a large mixing bowl, combine the minced pork with the blended paste and all the seasonings.
  • Use your hands to mix the ingredients thoroughly. Ensure that the blended paste and seasonings are evenly distributed throughout the meat.
  • Cover the bowl with plastic wrap and let the mixture sit in the refrigerator for at least 30 minutes to allow the flavours to meld.
  • Use the sausage meat in your desired recipes. Form it into ball or sausage shapes, use it as a stuffing for poultry, or incorporate it into dishes like sausage rolls.

Notes

Feel free to experiment with the ratios and ingredients to create a sausage meat that suits your taste and the specific dish you have in mind.
