Aligot

Aligot is a delightful French dish from the Auvergne that combines mashed potatoes with cheese, resulting in a rich, creamy, and stretchy texture. It’s a comfort food that’s perfect for colder weather. When I was seventeen, I joined some French friends from Rouen for a walking holiday in the Gorges du Tarn in southern France. In one small town (or was it a village), we ate dinner in a local cafe and were puzzled by the slowness of the service – not just for us but all diners. Just before the main course was served, the cook appeared with […]

Gromperekichelcher

Some of my fondest memories of living in Luxembourg are of the delicious smells coming from the snacks on offer at Schueberfouer, a famous annual fair in Luxembourg that dates back to the 14th century. It is one of the largest and oldest funfair in the country and is held in the city of Luxembourg, the capital of the Grand Duchy of Luxembourg. The fair takes place over a few weeks during the summer and attracts both locals and tourists alike. Schueberfouer features a wide array of attractions, rides, games, and various food stalls offering traditional Luxembourgish and international cuisine. […]

Beef gravy

Beef gravy has a deep, meaty taste that complements the flavours of slow roast beef. It can also be served over mashed potatoes, rice, or other side dishes to add moisture and a robust, savoury element to the meal. Beef gravy is a classic accompaniment to many comfort foods and hearty meals, providing a satisfying and flavorful addition to the dining experience. The best beef gravy does not come out of a packet. Instead, the gravy is made using the vegetable stock resulting from par-boiling the vegetables, a roux made using fat and juices from the roasted meat and plain […]

Piquant scallops in creamy champers sauce

Scottish scallops cooked in a creamy champagne sauce with fresh red chilli make for an exquisite and elegant dish, combining the delicate flavours of the sea with the luxurious essence of champagne. The result is a tangy dish that balances the natural sweetness of the scallops with the sophisticated, slightly tangy notes of champagne, all wrapped in a velvety, creamy texture. It’s a delicacy that pairs beautifully with a glass of champagne, providing a culinary experience that is both indulgent and refined.

Roast vegetables

West London slow roast beef without roasted vegetables and good gravy is like strawberries without cream. The roasted vegetables should be crisp, crunchy and tasty. I like to roast a mix of root vegetables with butternut squash. The more, the merrier.I have also tried beetroot and sweet potatoes, which also work well.Gravy made using the fat and juices from the beef should complement both the roast beef and the roast vegetables.

Basmati rice

Basmati rice has a name that derives from the Sanskrit word basamati, which means “fragrant.”Basmati rice is a North Indian variety of rice grown in the foothills of the Himalayas. This rice can be described as having a nutty flavor with a hint of floral notes. Many chefs and home cooks like working with basmati rice because it has a long grain that is slightly tapered at the end.
